BANANA BREAD

Yes I jumped on the bandwagon and made banana bread as well during #isolation and also we had some overripe bananas that were perfect for banana bread so had a reason to make it other than just wanting to bake in isolation (I think that makes sense)


Ingredients:

~ 1/3 cup of @goodbetterbruce unsweetened almond milk + apple cider vinegar.

~ 2 Tablespoons of ground flaxseed.

~ 1/2 cup of of pure maple syrup or rice malt syrup.

~ 1 cup of mashed overripe bananas (about 3 bananas).

~ 2 heaped Tblsps of almond butter.

~ 1 tsp of vanilla extract

~ 1 and 1/2 cups of oat flour

~ 2 tsp of cinnamon

~ 1 tsp of baking soda

~ 1/2 tsp of sea salt

~ 1/2 tsp of baking powder

~ walnuts to top (optional)


Method:

1️. Preheat the oven to 180 degrees Celsius and line a loaf tin with baking paper and grease with coconut oil.

2️. In a small bowl combine the almond milk and apple cider vinegar and mix (it thickens to great like a ”buttermilk” type mixture)

3️. In a large bowl mix together the wet ingredients as well as the flaxseeds.

4️. Sift in the remaining dry ingredients and mix until combined.

5️. Put mixture into lined baking tray and bake for 35 - 45 minutes (depending on your oven).

6️. Once done, let it cool in the loaf tin for about 30 minutes, then take out of the pan and slice into thick pieces.

Store in the fridge.
