I whipped up some homemade Gluten free hot cross buns - recipe from @__cookingwithkate__but I changed it a bit and added self raising flour as well as indenting the buns with crosses and filling them with@wellnaturallyau no sugar added melted dark chocolate!
Ingredients:
Bun:
~ 1/2 cup of GF plain flour
~ 1/2 cup of GF self raising flour
~ 1/2 cup of@mckenziesfoodscoconut flour
~ 2/3 cup of@goodbetterbruceunsweetened almond milk
~ 2 eggs
~ 1/4 cup of@pureharvestrice malt syrup ~ 1/2 cup of sultanas
~ 2 heaped tsps of cinnamon
~ 1/2 tsp nutmeg
~ 1 tsp vanilla extract
~ 1 tsp baking powder
Cross:
~ 45g of@wellnaturallyauno sugar added dark chocolate
Method:
1. Preheat the oven to 180 degrees Celsius. Like a baking tray with baking paper and grease with coconut oil. In a large mixing bowl, stir together the plain flour, self raising flour, coconut flour, baking powder, spices, sultanas.
2. Mix in the almond milk, vanilla and rice malt syrup.
3. Whisk the eggs together in a seperate bowl, and put 3/4 of the whisked eggs into the doughy mixture.
4. Roll the dough into buns and place on the lines baking tray.
5. Indent the buns with a cross using the end of a butter knife. Fill with @wellnaturallyau chocolate.
6. Put in the oven for about 22-25 minutes (depending on your oven)
Take out and enjoy either fresh or you can store in a container for a few days and reheat them when needed for that lovely arvo or morning snack!
