Made this the other day inspired by@_sarahlfit but I changed the recipe to be gluten free! Stay tuned as I might make this recipe again into a cake instead of a slab! Put your hand up in the comments if you want a choc orange cake recipe!
Ingredients:
~ 1/3 of a cup and 2 Tblsp of oat flour (bought from the store or homemade*)
~ 1 cup of almond meal
~ 1/3 cup of @mckenziesfoods buckwheat flour
~ 1 tsp of baking powder
~ 2 eggs
~ 3/4 cup of @goodbetterbruce unsweetened almond milk
~ 1 tsp of vanilla extract
~ 2 tsp of coconut oil
~ 1/2 cup of freshly squeezed orange juice
~ 2 Tblsp cacao powder
~ orange zest
*To make homemade oat flour just pulse oats in a blender until a flour/powder forms.
Method:
1. Preheat the oven to 180 degrees Celsius.
2️. Mix the oat flour, almond meal, buckwheat flour and baking powder in a large mixing bowl.
3️. In another mixing medium mixing bowl whisk together the eggs, almond milk, vanilla extract, coconut oil and orange juice.
4️. Pour the wet ingredients into the dry ingredients and mix.
5️. Pour half of the mixture into another bowl. Add cacao powder to one of the mixtures and stir.
6️. Place some of the original mixture into the lined loaf tin, then the cacao mixture and repeat for a marble effect.
7️. Put in the oven for 20-25 minutes. Once the timer has gone off, stick a kebab stick in and if it comes out clean then the cake is done.
8️. Leave to cool for 5-10 minutes and then slide it out of the pan and onto a wire cooling rack until fully cool. Store in the fridge.
