with homemade sweet chilli salsa on Chickpea wraps!! It’s basically 1 recipe with 3 little easy recipes in it, It includes a quick n easy vegan drippy cheese, tofu marinade, chickpea flour wrap and Ava's sweet chilli salsa1 I experimented with this yesterday for dinner and turned out to be so delicious. Hope you like it!

Serves: 2 people
Tofu Marinade Ingredients:
~ 1 block of firm tofu (400g), diced into cubes
~ 1/3 cup of @pureharvest GF soy sauce
(Taco seasoning - goes in marinade)
~ 1/2 tsp of paprika ~ 1/2 tsp of cumin ~ 1/2 tsp of oregano ~ 1/2 tsp of onion powder ~ shake of turmeric powder ~ shake of garlic powder •
Chickpea flour wrap:
~ 1 cup of @mckenziesfoods chickpea flour
~ 1 cup of water
~ pinch of salt
Ava’s Sweet chilli salsa:
~ 3 Tablespoons of @celebratehealth sweet chilli sauce
~ small handful of green capsicum, finely chopped
~ half of a medium red capsicum, finely chopped
~ 1 Tablespoon of red onion, finely chopped
~ half of a small Roma tomato, finely chopped
~ small handful of fresh coriander
~ Juice from half a lime
Quick n Easy Vegan Drippy Cheese:
~ 3 tsps of vegan butter, melted
~ little dash of almond milk
~ 4 Tablespoons of nutritional yeast
Method:
1. Preheat the oven to 180 degrees Celsius. Add the tofu marinade ingredients into a small mixing bowl and whisk until combined.
2. Add the diced tofu into the bowl and stir with a spatula until the tofu is coated. Pour the tofu and marinade into an 8x8 flat baking dish and marinate for at least 30 minutes (1 hour if you can).
3. Whilst the tofu is marinading prepare your vegetables and wraps. In a small bowl, add the sweet chilli salsa ingredients. Stir until combined. Set aside until serving.
4. Mix the quick vegan cheese sauce ingredients together until combined.
5. Once the Tofu is done marinading, place the tofu into a baking tray and bake for 25-30 minutes until crispy on the outside.
6. Preheat a non stick frying pan and lightly grease with avocado oil. Mix the chickpea flour wrap ingredients together in a medium bowl.
7. Pour half of the chickpea flour mixture into the pan. Cook, then Flip and cook until golden brown.
