Tofu, mushroom, zucchini and onion stir fry!

So simple but delicious and full of spices - no measurements here cause you can adjust the measurements to how much you need/want and what your own tastebuds like!

Ingredients:

~ Extra firm tofu

~ mushrooms, chopped

~ zucchini, chopped

~ brown onion, chopped


Sauce:

~ coconut aminos (@thesourcebulkfoods )

~ sesame oil

~ garlic clove, minced

~ squeeze of lime

~ nutritional yeast

~ Spices: paprika, turmeric and oregano


Method:

1. Chop the tofu into small cubes. Add all of the veggies into a preheated pan on medium heat.

3. Mix all of the sauce ingredients in a small bowl and then add the tofu and coat the tofu with the sauce.

4. Cook until the onion is translucent. Transfer to a small bowl. Add the tofu into the pan, reserving some leftover sauce.

5. Once the tofu is golden brown, add the veggies and leftover sauce. Cook until fragrant.

6. Serve with pasta or rice! The perfect easy weeknight dish👌🏻
