Butter bean and Sweet potato Falafels

The BEST Butter bean and Sweet potato Falafels everrrr! These are crispy on the outside and soft on the inside are full of flavour, they were so so good and awesome for leftover lunches mmmmmm....

Ingredients:

~ 1 can of butter beans, drained and pat dry with paper towel

~ Half of a medium to large sweet potato, chopped into quarters and roasted with the skin on.

~ 1 tsp of paprika

~ 1 tsp of turmeric

~ 1 tsp of garlic powder

~ 1 tsp of dried mixed herbs

~ 1/2 tsp of cumin

~ salt n pepper

~ 1/4 cup of coriander, chopped

~ 3 Tablespoons of Buckwheat flour

~ 1 tsp of fresh lime juice


Method:


1. Preheat your air fryer to 180 degrees Celsius for 10 minutes. (If you don’t own an air fryer, preheat your oven to 180 degrees Celsius fan forced). 2. Mash the butter beans in a medium glass mixing bowl. Scoop the flesh out of the roasted sweet potatoes and place in the bowl. Mash until combined.


3. Add in the paprika, turmeric, garlic powder, mixed herbs, cumin and salt n pepper. Mash until combined.


4. Then add in the coriander and lime juice, mix with a spoon until combined.

5. Lastly add the buckwheat flour and mix with a spoon until fully combined.

Shape the mixture into 12 round flat patties.


6. Place into the preheated air fryer and cook for 15 minutes or until golden brown. (If using oven place on a lined baking tray and cook for 30 minutes or until golden brown). 7. Once done take out of the oven or air fryer and serve with whatever sauce you like! I like to serve mine with @celebratehealth sweet chilli sauce or @kehoeskitchen tasty turmeric cashew cheese!
