Had this for dinner the other day and it is amazingš¤© recipe based off @veganbowls š Bowl includes a creamy turmeric sauce made form coconut milk and turmeric spice as well as tender broccoli, cooked chickpeas and sautĆ©ed mushrooms šš¤¤
Serves: 3-4
Ingredients:
1 packet of brown rice
200g mushrooms, chopped
1 can chickpeas, drained and rinsed
2 tbsp GF tamari
1 tbsp pure maple syrup
1/4 can coconut milk
1 tsp turmeric
Black pepper to taste
1 tbsp tapioca flour
200g tenderstem broccoli, chopped

Method:
1. Cook the rice according to the package instructions
2. Meanwhile, add the mushrooms and the chickpeas to a frying pan with some olive oil and stir for 5 minutes, until the mushrooms soften.
3. Add the tamari, maple syrup, coconut milk and turmeric. Season to taste with Black pepper.
4. Stir in the tapioca flour together with the drained and rinsed pasta.
5. Stir in the broccoli and cook for a further 2-3 mins, until bright green and soft.
6. Serve brown rice in a bowl with sauce.
