MINT CHOC CHIP OVERNIGHT CHILLED OATS

I cant tell you how many people asked me for this recipe as soon as I posted on my story the other day! I was so flattered that everyone wanted the recipe. I love it when people try out my recipes, give my feedback and I just love seeing people be so inspired by my recipes, I can’t tell you how much It means to me and how happy it makes me feel Anyways here is the recipe guyssss it truly tastes like fudge gooey chunky mint choc chip cake batter for breakfast!

Ingredients:

~ 1 cup of @goodbetterbruce unsweetened almond milk

~ 1/2 cup of rolled oats

~ dash of water

~ 1 tsp of @unicornsuperfoods matcha powder

~ 1/4 tsp of peppermint extract

~ 1 Tblsp of cacao nibs

~ 1 tsp of chia seeds

~ dash of maple syrup

~ 1 Tblsp of coconut yoghurt


Cacao Ganache topping:

~ dash of water

~ 2 Tblsps of cacao powder


Method:

1. Add the milk, oats and a dash of water to microwave safe bowl. Cook for 3 minutes in the microwave (make sure you watch the oats so they don’t overflow out of the bowl)


2. stir then cook for another 1 minute. Then add the match powder, peppermint extract, cacao nibs, coconut yoghurt and maple syrup and cook again for 30 seconds to 1 minute (30 seconds for more runny oatmeal or 1 minute for thicker oatmeal)


3. Make your ganache by adding the cacao powder and water to a small mixing bowl and stir until combined. Pour on top of the oatmeal evenly.


4. Place in the fridge for at least 4-5 hours or overnight preferably. Eat in the morning with any toppings you like! I topped mine with @mayversfood spreads , granola and mint leaves!
