Roast Vegetable and chicken salad with brown rice!

This makes the perfect dinner or lunch, topped with danish feta and dressed with balsamic glaze. #saladsforlife

~ well it’s really as simple as this ~


Ingredients:

~ any vegetables that you like (that can be roasted of course) ~ 1 brown rice packet ~ shredded chicken ~ shallots ~ danish feta (can use dairy free feta, if vegan, available at #woolworths) ~ balsamic dressing and or/ glaze


Method:

1. Chop all vegetables (of your choice) into cubes. 2. Place chopped vegetables into a medium sized bowl, coat with olive oil, salts ‘n’ pepper and mixed dried herbs. 3. Roast in the air fryer for 10-15 minutes. Or if you don’t have an air fryer just place on a lined baking tray and roast in the oven for 20-25 minutes. 4. Place the shredded roast chicken, half a brown rice packet and roasted vegetables into a bowl. 5. Drizzle with balsamic dressing and sprinkle with danish feta and chopped shallots.
