VEGAN CHEESY CARAMELISED HERBED ONION BUTTER BEANS

You had me at cheesy and caramelized! Hahaha, I asked on my story on Instagram if you guys wanted the recipe and most of you said yes please so here it is👍🏼

Ingredients:
~ 1 can of butter beans, drained and rinsed
~ 1 yellow onion, chopped
~ 1/2 cup of nutritional yeast
~ 1/3 cup of @goodbetterbruce unsweetened almond milk
~ 3 heaped tsps of vegan butter, melted
~ 1/2 tsp of garlic powder
~ 1/2 tsp of paprika
~ 1/2 tsp of turmeric
~ 1 tsp of mixed herbs
~ salt n pepper (lots and lots of pepper!)
Method:
1. Preheat your frying pan to a medium heat. Add the chopped onions and cook until translucent.
2. Mix the almond milk, nutritional yeast and vegan butter together in a small jug. Add the butter beans and cook for about 1 minute, stirring occasionally.
3. Add the cheesy sauce and stir until combined. Add the herbs and spices and stir until combined. (You can adjust the spices to your taste buds, so you can add more or less!)
4. Done! Enjoy on top of pasta, with rice, or veggies like I did!
