The secret ingredient for a gooey fudge pancake is sweet tato!! Made these on Sunday for my brunch and oh were they scrumptious I had some leftover mashed sweet potato in the fridge so thought I might as well put it to good (and yummy) use! These were inspired by @earthofmariaa

Serves: Makes 6 pancakes
Ingredients:
~ 1/2 cup of mashed sweet potato
~ 1 cup of oat flour
~ 1/2 cup and 1/4 cup of unsweetened almond mylk (I used @goodbetterbruce )
~ 1 tsp of pure maple syrup
~ 1 tsp of @mckenziesfoods baking powder
Method:
1. Add the oat flour and baking powder to a medium mixing bowl and whisk.
2. Add the plant mylk, sweet potato and maple syrup, whisk until fully combined.
2. Scoop a 1/4 cup of misfire and spoon into a low-medium preheated pan.
3. Cook until lightly golden on the sides. Flip and then repeat for each pancake.
Topped with @nakulaplantbased coconut yoghurt, @mayversfood extra crunchy PB, chia seeds, half a sliced banana, toasted coconut flakes and pure maple syrup!
