Ingredients:
~ 1 can of chickpeas (425g), drained, rinsed and patted dry ~ 4 T of brown rice syrup ~ 2/3 cup of cacao nibs ~ 1 and 1/4 tsp of baking powder ~ 1 T of vanilla extract ~ 2/3 cup of @macro_wholefoods cashew spread
~ pinch of salt
Method:
1. Preheat oven to 180 degrees Celsius. Line two baking trays with greased baking paper. 2. Blend the chickpeas in a food processor until chopped. Add the rest of the ingredients (except for the cacao nibs!) and blend until the dough is fully combined. 3. Pour into a mixing bowl and fold in the cacao nibs. 4. Scoop 1 tablespoon of batter into prepared baking tray. Press down and swirl until flat. Repeat for the rest of the dough mixture. 5. Cook in the oven for 12 minutes. Take out of oven to cool for 10 or so minutes then take off the baking tray and store in the fridge.
