Serves: Makes 5 medium pancakes
Ingredients:
~ 1/4 cup of coconut flour
~ 1/4 teaspoon of baking soda
~ 2 tablespoons of natural peanut butter
~ 2 eggs, lightly beaten
~ 1/2 tablespoon of maple syrup
~ 1/2 a medium banana, mashed
~ 1/4 cup of unsweetened almond milk (I choose #nuttybruce)
Method:
1. In a large bowl, mix together all the Ingredients with a whisk. 3. Lightly coat a large pan with coconut oil and place over medium heat. Drop about 3 tablespoons of the batter into the pan. Wait for about 1-2 minutes then flip and cook for 1 minute on the other side. Smaller pancakes are best as they don't flip easily. 4. Repeat for each pancake, making sure you oil the pan with coconut oil after every pancake. 5. Spread peanut butter on top and place with blueberries.
