Ingredients:
~ 420g can of Black beans (low salt) ~ 2 large eggs
~ 1/2 cup of cacao powder
~ 3/4 cup of unrefined coconut sugar ~ 1/2 teaspoon of extra virgin avocado oil ~ 1 tablespoon of @goodbetterbruce unsweetened almond milk
~ 1 teaspoon of balsamic vinegar
~ 1/2 teaspoon of baking soda ~ 1/2 teaspoon of baking powder ~ 1 cup of cacao nibs ~ fresh blueberries for topping (optional)
NOTE!! Do not blend in Nutri bullet 900 series, I own this bullet and I blended the ingredients together in it...the blender became too hot and exploded all over me when I opened it!😂🤦🏼♀️🤪🤭 Blend in a large blender or put ingredients in a bowl and blend with an electric mixer 👍 #trialanderrorcookingclub
Method:
1. Preheat the oven to 180 degrees Celsius. 2. Grease a nonstick 8x8-inch square baking pan with baking spray and line with parchment paper, spray baking paper as well!!, leaving an overhang on all sides. 3. Blend the black beans, eggs, cocoa powder, coconut sugar, avocado oil, unsweetened almond milk, balsamic vinegar, baking soda, baking powder and coffee in the blender until smooth and pour into a bowl. 4. Fold in 1/2 cup of cacao nibs until combined. 5. Pour the brownie batter into the prepared pan. Sprinkle the remaining cacao nibs evenly over the top of the brownies. 6. Bake the brownies until a toothpick comes out clean, about 30 minutes. 7.
