Peanut butter and Maca PANCAKES

Egg free, gluten free, dairy free, refined sugar free! ONLY 7 INGREDIENTS! Using a secret ingredient - Aquafaba! So easy to whip up the Aquafaba and replace it in recipes instead of eggs. Hope you enjoy and tag me @eating_clean_with_ava on Instagram if you try them!


Makes 6 pancakes

Ingredients:

~ 6 Tablespoons of Aquafaba (chickpea juice), whipped until fluffy like egg whites.

~ 1 and 1/4 cup of GF flour (I used a GF flour mix from @thesourcegoldcoast@thesourcebulkfoods )

~ 2 Tablespoons of rice malt syrup (@pureharvest )

~ 1/4 cup of unsweetened almond mylk (@goodbetterbruce )

~ 1 tsp of vanilla extract

~ 1/2 tsp of baking soda

~ 2 Tablespoons of smooth peanut butter (@mayversfood )

~ 2 tsps of maca powder


Method:

1. Add the GF flour blend, maca and baking soda to a large mixing bowl.


2. Add the mylk, whipped fluffy chickpea ‘egg whites’ and vanilla extract to the dry ingredients.


3. Mix and fold with a spatula until combined. (Add more sweetener or PB or maca if needed)


4. Scoop 1/4 cup of the mixture into the preheated pan. Cook and flip. Serve with your favourite toppings!
