I found this recipe from @ambitiouskitchen and it’s the only pancake recipe that is successful every time🙌 I tweaked the recipe a little, so I hope you like it!

Serves: 5-6 pancakes
Ingredients:
Wet Ingredients: ~ 2 large eggs ~ 1 teaspoon of pure vanilla extract ~ 1/3 cup of activated almond milk ~ 1 tablespoon of hemp seed oil**
Dry ingredients:
~ 1 and 1/4 cup of almond meal
~ 1/4 teaspoon of baking soda
~ pinch of pink Himalayan salt
Method:
1. In a large bowl, mix together all the wet Ingredients with a whisk. 2. Add in all the dry ingredients and stir with a spoon until combined. 3. Lightly coat a large pan with coconut oil and place over medium heat. Drop about 1/4 cup of the batter into the pan. Wait for about 1-2 minutes then flip and cook for 1 minute on the other side. 4. Repeat for each pancake, making sure you oil the pan with coconut oil after every pancake. 5. Spread almond butter on top and place with chopped strawberries,blackberries and blueberries.
**if you don’t have hemp seed oil then you can substitute other oils like olive oil or coconut oil.
