VANILLA PISTACHIO coconut protein balls!

I know it’s a long name but there are so so many yummy flavours packed into these tiny little protein balls, photo taken in my @ecoearthhomewares mini coconut cup! 3 easy steps! Makes a small batch, ready for your week of snacks!


Ingredients:

~ 1 cup of pitted dates, soaked and drained.

~ 1/4 - 1/2 cup of salted pistachios

~ 1/4 - 1/2 cup of @nutraorganics thriving vanilla protein powder

~ sprinkle of cinnamon

~ 2 Tblsp of warm water

~ 2 Tblsp of coconut oil


Method:

1️. Blend the dry ingredients in a food processor. Once fully combined, transfer to a mixing bowl.


2️. Add in the water and coconut oil and mix with a spoon or spatula until a doughy like texture is formed.


3️. Roll into balls and roll in toasted coconut or crushed pistachios! Enjoy!! Store in the fridge.
